Quick Easy Egg Bites

Whether you are working from home or commuting to work, these quick and easy egg bites are a perfect morning meal. These egg bites are pre-made ahead of time and are frozen for when you need them. After a quick 1-130 minute microwave you are good to go. I like to pair my egg bites with a small yogurt or fruit.


Ingredients

  • 5 Eggs

  • 1 Cup Old Cheddar Cheese

  • Bacon

  • Green Onion

Note: option to add in peppers, tomato, and other veggies as desired. I have also used cut-up leftover ham instead of bacon and it tastes just as good.


Instructions

  • Cook up bacon and chop into bacon bits.

  • Cut up green onions and shred cheddar cheese.

  • In a medium-size bowl crack eggs (option to add a splash of milk - we use oat milk), and whisk eggs. Once whisked add in the rest of the ingredients and mix together.

  • Preheat oven to 350 F

  • Spray or butter muffin tines and add 3/4 egg mixture to each section

  • Let cool and put them in the “snack ziplock bags” 2 egg bites fit perfectly and freeze


Note: 5 eggs make about 6 muffin tins. I like to double the recipe and make one big batch.
